Monitoring a switch on a different network

I need some insight on this situation. I'm redoing the network in the office to separate voice and data.

On our router/firewall (Fortigate 200A), port 1 is the data network (192.168.8.0/24) and port 2 is the voice network (10.10.100.0/24). The switch I'm going to be using for the phones is a Cisco Catalyst 3560. Right now, the switch is configured with the default VLAN 1 to be the main interface.

Our network monitoring server is obviously only going to be connected to the 192.168.8.0/24 network but it needs to be able to connect to the switch to monitor it and so I can keep an eye on the bandwidth utilization and so on.

What's the best way to do this?
