Switching over to a new MPLS

We currently have an MPLS for a few locations and are signing up for a new contract on a new MPLS. We already have most routers hooked up to the new circuits at each location. Two locations will also be added to the MPLS that are currently on either a direct T1 line 1 mile away, or VPN IPsec.

I am supposed to run the new MPLS in parallel to test and then switch it over. Wouldn't this require at least one device / computer at each location on the new MPLS? Could I setup a VLAN on our main switch at the central location?

Not sure exactly how the switch over will work as far as needed to plug in one location, then drive to the next location. There would be 1-2 hours downtime for some locations as the drive is that long. We have 5 locations and 2 techs.
